Healthy Choices At Vesuvio
Posted by Foobooz on September 24th, 2007

No one has ever accused the cheesesteak of being a healthy dinner choice, even when it’s named one of the top five sandwiches in America like Vesuvio’s Cheesesteak BLT. But that doesn’t mean you can’t eat healthy at Vesuvio while your dining partner digs into a sandwich of steak and bacon.
Vesuvio has added “Optimal Choice” items in its dinner, vegetarian, and bar menus. The Optimal Choice menu items are formulated by Optimal Wellness, Inc. nutrition specialist Gabrielle Sigal and provide balanced portions of whole grains, lean protein, vegetables, as well as healthy fats and fiber.
Highlights after the jump.
Gazpacho Soup with tomato, cucumber, onion, jalapeno, and cilantro
Spinach Salad with baby spinach, orange segment, shaved fennel, grilled pineapple, and soy citrus vinaigrette
Grilled Salmon with honey lime bbq sauce, roasted vegetables, and bulgar wheat
Pan Seared Red Snapper with black bean, mango, papaya salsa, sweet potato puree, and fried plantains
Chicken Bruschetta with tomato, shaved parmesan, broccoli rabe, and artichoke hearts
