Heirloom Tomato Dinner at Amada

Jose Garces’ Amada is offering a special $55 Heirloom Tomato Chef’s Tasting Menu tomorrow through Wednesday, August 25th. The menu is in honor of Buñel, Spain’s La Tomatina Festival. In Spain it is a food fight with more than 150,000 tomatoes hurled in honor of patron saints  San Luis Bertràn and Mare de Dèu dels Desemparats. At Amada the tomatoes won’t be thrown but served.

The menu will include:

Mosaico del Tomate- Raspberry, Toasted Hazelnuts, Acacia Honey

Salmorejo- Chilled Soup, Jamon Serrano, Hiramasa Belly, Strawberry, Compressed Egg Yolk

Pan con Tomate- Sherry and Tomato puree, Boquerones, Grilled bread

Tomate Coca – Crispy Flat Bread with Tomato Sofriget Sauce and Manchego Cheese, topped with herb-marinated heirloom tomatoes

Bacalao Croquettes- Salt Cod, Heirloom Tomato Sauce, American Caviar

Atun con Tomates- Rare Bigeye Tuna, Chorizo and Sherry Dressing, Grilled Scallions, Melon Sorbet

Chuleta de Cordero- Blackened Lamb Porterhouse, Grilled Heirloom Tomatoes and Melted Leeks

Higado de Pato- Marinated Heirlooms Tomato, Pinenut Risotto, Membrillo Honey

Lubina al Pescador- Roasted Sea Bass, Catalan Tomato Stew, Piquillo Pepper and Potato Salad

Heirloom Tomato Sorbet
