Kevin Sbraga Taking Over the Omni

Top Chef winner Kevin Sbraga will be previewing his yet-to-be-announced restaurant on Thursday, December 9th at the Azalea Restaurant in the Omni Hotel at Independence Park.
The four-course meal will cost $75 per person and will include wine pairings. Sbraga promises a simple yet elegant menu similar to what he will be offering in his forthcoming restaurant. “My restaurant is going to reflect how and what I like to eat. I want to create a restaurant where people feel as though they are at an intimate dinner party.”
Crudo of fluke with fall spices and apple cider gelee
Pumpkin agnolotti with sweetbreads, pickled beech mushrooms, sage, pine nuts and raisins
Squab breast with basil, purple cauliflower cous cous, sprouted lentils and chocolate orange harissa
Salted caramel pot de crème
