Zinc Gets New Chef, Menu for Fall

Olivier Desaintmartin, owner of Caribou Cafe and  Zinc has brought in a new chef de cuisine at Zinc. Nanina Scriber comes from Benoit in New York where she was a sous chef. Scriber has created a new menu for fall, new dishes include seared skate with toasted almonds and classic brown butter sauce as well as a new $85 wild duck dinner for two.

Wild duck served two ways.
First service: The duck is carved and prepared table side.
The breasts are removed, seared and served
with roasted potatoes and caramelized onions.
The carcass is pressed in our 1870 French silver press
to release all juices. These juices are flambéed with Cognac
then reduced to a succulent sauce to cover the breasts.
Second service: The remaining legs and wings, finished simply
on the grill are served on a tasty salad.

      I’m confused. I had that dish there at least 2 years ago. How is it new?

      Hah, true, I remember it being 70.

      Yup, that’s what it used to be. I haven’t had a chance to try it yet so I’m wishing I had before the price increase, but I imagine those wild ducks aren’t getting any cheaper these days. Was it good? Worth the price?

      Still no vegetarian entrees, so I’m still not going to be able to take my vegetarian girlfriend there. Oh well.

      Abby, had the duck there last fall – it was neat to watch and the breasts and jus were tasty enough, but the legs were woefully overcooked, the salad pitiful, and it was definitely nowhere near a $70 value, tastewise.

      The duck is back indeed, $85 is more than the initial price but the duck itself went up 8 dollars. Still reasonable though. Its a lot of “good” food (4 full plates for two guests). The menu changed with our new chef and we kept the classics (steak frites, scallops, escargots and goat cheese salad. We do have a beautiful vegetarian plate . Our costs did go up so are yours and everybody’s but our prices stayed basically the same.

      You did, Olivier, aside from your opinion if the duck is good or not but I’m guessing that might be biased ;) I agree it’s still a bargain for a big meal for two, and things have gotten more expensive especially food. My comment about wild duck going up in price was genuine- I come from a family of farmers and I know how feed prices and fuel costs affect the bottom line for buyers.

      And just for your personal response, I’m making it a point to come here! Will you be as gracious when I visit and help me get food without dairy in it? I’m a lactard and avoid French food (and most other food to be honest) when I’m out because dairy lurks in everything.

      bravo every body. I forwarded your comments to the farmer and he kept his price down by respect to my customers. the price of the duck is 78 dollars for two. Since Tuesday we had 5 and two already for next week.
