Tashan Gains Another Fan

Brian Freedman is the latest to sing the praises of Tashan. Among the accolades, “intriguing,” “creative” and “well executed.”

So much is so good here. Tandoori shrimp, a usually humble preparation of reliably overcooked shrimp and fairly monochromatic seasoning, was shown real respect. Popping-tender and kissed with smoke, these savory pink commas were the beneficiaries of a hung-yogurt crust and made maple-y by the addition of herbal fenugreek. The flavors were both familiar and bracingly exotic. The tandoors were also used brilliantly for pink-centered lamb chops mysterious with Kashmiri paprika and protected by a papaya glaze complicated with mustard oil and honey.

      Well the difference between the food and the service is like night and day at Tashan. Everything we ordered was outstanding. I am still dreaming about the lamb chops! But i felt like i was on a deserted island at the table we sat at. Had to flag down a waiter or hostess to get a re-fill of my drink and dinner took 3 hours! I wold go back, however, because the food is that good!

      Even though I know Sylvat is a good guy and I really wanted them to succeed here, I didn’t hold out much hope for their success. I’m happy that I may be proven wrong, because these reviews are great and the food is really, really good. Good enough that people may actually go back, which is the difference between a comet flash and a lasting business.
