Eat This Now: Stateside’s Bacon Dougnut

Last night I took my own advice and finally checked out Stateside. Chef George Sabatino didn’t disappoint as his talents were visible in everything I tried. But what I really want to talk about today is the apple stuffed doughnut with vanilla bean caramel and candied bacon. It’s obvious Sabatino observed Barbuzzo’s salted-caramel budino selling by the six-pack and has answered with his own sweet and savory dessert.

      You are correct. Everything I tasted (pickled veggies, rabbit rillets, oyster, beef cheek, skate wing, apple donut, etc,) was knee buckingly good. Sabatino is extremely talented. Philadelphia is lucky to have him.

      I’m skeptical about the Barbuzzo-budino-based origin theory – Dynamo Donuts in San Francisco is pretty famous (deservedly) for their apple/bacon/maple donut, and they’re certainly not alone, the bacon-based donut has become a minor trend of its own. Regardless, the Stateside version sounds good, and I’m happy to have one readily available in Philly.

      It sounds like an amazing dessert, and Art’s word is bond, so its truth.

      But I do find it interesting that Mr. Sheehan’s “12 food trends that need to die” declares the excessive use of bacon an awful trend and he cites bacon desserts an example.
