German Chef in an Italian Restaurant

During Euro 2012 Brauhaus Schmitz chef Jeremy Nolen bet Le Virtu’s Joe Cicala that Germany would defeat the Azzurri of Italy. Nolen lost that bet and now must cook a collaborative dinner at Le Virtu. The dinner is Wednesday, August 8th and will focus on food from menu of specialties from northern Italy. The dinner costs $65 per person and includes wine pairings from Trentino and Alto Adige.

Minestra di Crauti – sauerkraut soup with borlotti beans, escarole, potatoes, speck, bacon, and garnished with rye croutons
Primo
Schlutzkrapfen – Rye flour ravioli filled with spinach and quark cheese, sauteed in brown butter and topped with shaved asiago
Secondo
Veal Goulash and Canederli – Braised veal breast with speck-bread dumplings
Dolce
Strudel – Apple, fig, and pine nut strudel with ice cream
