Rotisseur Has a New Chef and Mighty Fine Chicken Noodle Soup
Posted by Foobooz on November 14th, 2012
Rotisseur, Aaron Matzkin’s 18-month old rotisserie chicken spot on 21st Street has a new face in the kitchen, Garces alum John Kasenchak. Kasenchak joins the the Best of Philly winning Rotisseur from Tinto/Village Whiskey where he was a sous chef. Kasenchak has already made his presence known with Benton’s bacon roasted Brussels sprouts which smelled ridiculously good when teasingly waved under our nose yesterday.
But what has us obsessed right now is his chicken noodle soup. Whole chickens are poached in the vegetable stock, the same stock that makes the farro salad. Then more chicken, noodles and thyme are added. It’s a hearty broth, big pieces of chicken and fortifying for a cold day. We suspect it will be in heavy rotation for lunch this fall and winter.
Rotisseur is not sitting idle. The space is in the midst of changing its look. Gone are the bright yellow walls and a new mural is being painted. The chicken spot has also expanded their hours with Saturday hours from 11 a.m. to 9:30 p.m.
