Things are starting to come together for the summer season at Morgan’s Pier. Last week, I talked with George Sabatino after he announced that he would be taking over the top slot there and he told me that he already had one of his lieutenants chosen–Paul Lyons, ex of Barbuzzo and a long-time friend who would be working as Sabatino’s chef de cuisine.
And now we know that Sabatino has pulled in another talent. According to the Insider, He’s got Pat Cancelliere in the kitchen, too, standing as a sous chef.
Cancelliere recently closed his Argentine-Italian spot, 943, in the Italian Market, which was a big loss for that neighborhood. After locking the door at 943 behind him, he moved on to a short turn at Bainbridge Street Barrel House. And now Morgan’s Pier, which is due to light the fires for the start of prep and menu testing in the first week of April.

Pascual “Pat” Cancelliere’s has closed his Italian Market BYOB, 943. The Argentinian/Italian BYOB opened in February of 2011 and was briefly closed after Cancelliere had heart surgery in July. The storefront is now for rent and Cancelliere plans some time off before his next job.

Craig LaBan really enjoys dining at 943, the Argentinian/Italian BYOB by Pascual “Pat” Cancelliere situated on 9th Street in the Italian Market.
beef is 943′s sweet spot – simply grilled over coals that smoke with wood trimmings from Green Meadow farm, then plated next to green beans and fingerlings sauteed with molten duck fat. True to style, this kitchen properly opts for cuts that showcase flavor over tenderness – my favorite being the skirt, followed by the just-chewy-enough (but smallish) short rib, and then the more expensive N.Y. strip (nicknamed “bife de chorizo” because of its shape, but slightly misleading because it doesn’t come with sausage). While they initially seemed plain, a basting of chimichurri (with a swig of malbec) was all the tang they needed to come to life: straight-to-the-point beefy bistro savor.

Don’t mind what’s been 86ed at 943, Adam Erace says Pat Cancelliere’s 9th Street BYOB flows seamlessly between Italian and Argentinian.
Good things come to those who wait: knots of housemade al dente pappardelle (Cancelliere’s favorite cut) tossed with shrimp, basil and a light, bright tomato broth; crisp-enough-to-hear-it chicken Milanese, thicker than the breaded cutlets from the butchers down the street and, shy of an extra sprinkle of salt, perfect; and a thicket of twice-fried, parsley-flecked papas fritas fortified with enough garlic to repel every bloodsucker (and most dates) within a 10-mile radius. Try the fries con huevo: For a-la-minute egg scrambling, Cancelliere keeps a pan hot on a burner, rippling with garlic oil.
