Percy Street BBQ has been rolling out a new menu this month. The menu gets a bit away from the orthodox Texas barbecue roots of the South Street barbecue spot and gives chef Erin O’Shea a chance to show off what she can do. Don’t worry though, the brisket is still the brisket, but check out some of these new menu items.
Owner Steve Cook tells us the new menu answers the question, how’s the best way to prepare this. Take the pork belly, which has been reitroduced as an appetizer, the dish is now served with potato bread, cured egg yolk and a touch of sweetness by way of maple syrup. And it already has picked up fans. Another new item, the lamb ribs are served with braised sauerkraut and apples.

Trey Popp falls for Joe Carroll’s Fette Sau. Anointing the Brooklyn transplant as the best thing that’s happened to Philadelphia’s barbecue scene.
The first beef short rib I had here looked like it had just finished cooking. Biting through its layers of fat and meat, seasoned (but not overshadowed) by smoke, was like sinking into a down pillow on a feather bed in a backwoods hunting shack. The texture defied speech.
The one I got a week later? It could’ve ranked as the best barbecued short rib I’d ever had, but that first one still might be the best short rib, period. Expect something similar with the pork belly and flank steak—though neither of those was quite as show-stopping for me.

Next time you as for a Yuengling Lager, someone many ask you if you mean the beer or the sauce. Yuengling has partnered with All-N-Food to produce a line of barbecue sauces created with Yuengling’s Lager, Porter and Black & Tan. Yuengling also has unveiled a line of hot sauces based around their Lager.
But that’s not all, tomato sauces, soup and salad dressings are also in the works.
Look for the barbecue and hot sauces to be on Food Lion shelves (and at the Pottsville brewery) before the Super Bowl with wider distribution to follow.

Fishtown’s barbeque battleground is in full effect, and it seems as though Bubba’s Texas BBQ and Fette Sau are firing on all cylinders. Finding almost every meaty offering to be a success at Bubba’s Texas BBQ, Brian Freedman’s review shows promise for the little guy standing in Goliath’s shadow.
Pit master Robert “Bubba” Kolbasowski, a Texas native, is a stickler for details, and his 21-spice dry rub and homemade BBQ sauce are remarkable testaments to his focus on every aspect of what gets sent out of his kitchen. Fortunately, he uses his sauces judiciously, never over-applying them, which would be the BBQ-crime equivalent to certain other offenses that get prosecuted in the Hague. And in truth, his best meats really need no additional sauce beyond what he adds—just a pile of paper towels and beer, and they’re good to go.

Korean Beef at Blue Belly BBQ
Craig LaBan reviews Blue Belly BBQ on 6th Street on the border between Queen Village and Bella Vista and finds the sandwiches are the thing at Gene Giuffi’s small spot.
[T]he best reason to visit Blue Belly is ultimately its inventive sandwiches. That isn’t surprising, since it was initially conceived as a lunch option for the Bella Vista-Queen Village neighborhoods it serves.
And I find myself craving a number of Giuffi’s internationally inspired creations, at least with the appropriate sauce adjustments, as each one begged for just one more flavor flourish. A gingery Korean beef sandwich laced with spicy kimchi and crunchy fried shallots needed just a line of sweet barbecue sauce to be complete. The grilled jerk chicken breasts, aromatic with allspice, habanero powder, and the juicy pucker of pickled green tomatoes, demanded an extra spice-jolt of sambal-fired hot sauce. The slow-smoked cuminy lamb, so bold in its lambiness with radish and tortilla salad on top, needed vinegar sauce for moisture and tang.

Adam Erace has words of praise for the service and the food at Fette Sau, the Brooklyn barbecue joint that Stephen Starr and Joe Carroll have brought to Fishtown.
Carroll developed this rub early on in his barbecue education, back when he’d “spend the night sitting up with a brisket, pork shoulder and a couple racks of ribs” on the Bullet smoker he stored in his parents’ Jersey backyard. “The rub’s sweet and bitter notes, those two flavors create a complex interesting flavor, like putting milk and sugar into black coffee,” he says.
Add in the pork belly, my favorite of Fette Sau’s meats, and you’ve got breakfast. Thick slices of it glistened against the brown butcher paper, the alternating bands of flesh and fat. Chef Jim Davidson, a Starr veteran executing Carroll’s vision, knows what he’s doing. The smoke came through immediately, then the rub. I tried a little naked, a little with each sauce; a splash of the vinegar sharpened the flavors like a Nikon lens.

Even restaurants like to feel special once in a while, even if only for a day. Percy Street isn’t getting any younger, and Erin O’Shea’s barbecue spot wants to celebrate its birthdays with you. On Thursday, November 8, Percy Street will be hosting the birthday bash at its South Street location, with happy hour specials all night. That means $3 Oskar Blues cans and half-priced snacks. The Percy Street menu will also roll back their prices to the opening prices back in 2009, before bacon was fated for extinction.
Of course, there will be complimentary cake (in the shape of an Oskar Blues drinking cow), party favors, as well as live entertainment from the blues band John Francis and the Midnight Choir starting at 8 p.m.. At 10 p.m. the Happy Hour menu will end, though complimentary Pulled Pork Sliders will be served to keep the party going.
Dancing, while highly recommended, is not required.

Philly Phoodie provides us with this early report from Fette Sau where it seems like he and his friend ordered the whole menu.
This is going to be the kind of place people love or hate. Or love to hate. Or hate to love. But for me, it’s probably my favorite BBQ I have experienced to date at a restaurant in the city, and I will continue to stuff my face with various meat products and over indulgent sides and love every minute of it.

Scott Schroeder, George Sabatino, Joe Cicala and Angela Ranalli are doing an outdoor family-style barbecue at Le Virtu on Monday October, 29th. The crew is preparing an impressive menu for the late fall dinner including lobster brodo, whole grilled bronzino, and bone marrow and truffle sausage. The dinner is $90 per person and includes food, beer and wine.
