Korean Beef at Blue Belly BBQ
Craig LaBan reviews Blue Belly BBQ on 6th Street on the border between Queen Village and Bella Vista and finds the sandwiches are the thing at Gene Giuffi’s small spot.
[T]he best reason to visit Blue Belly is ultimately its inventive sandwiches. That isn’t surprising, since it was initially conceived as a lunch option for the Bella Vista-Queen Village neighborhoods it serves.
And I find myself craving a number of Giuffi’s internationally inspired creations, at least with the appropriate sauce adjustments, as each one begged for just one more flavor flourish. A gingery Korean beef sandwich laced with spicy kimchi and crunchy fried shallots needed just a line of sweet barbecue sauce to be complete. The grilled jerk chicken breasts, aromatic with allspice, habanero powder, and the juicy pucker of pickled green tomatoes, demanded an extra spice-jolt of sambal-fired hot sauce. The slow-smoked cuminy lamb, so bold in its lambiness with radish and tortilla salad on top, needed vinegar sauce for moisture and tang.

Over at Meal Ticket Adam Erace has taken a look at Blue Belly BBQ and likes (some of) what he sees. It seems Gene Giuffi’s meats and Blue Belly’s sandwich toppers are sending some mixed and muddled signals.
With no rules to curtail the over-embellishment of the sloppily built sandwiches, you wind up with lime-splashed jicama, crunchy radish, chile vinegar and crispy tortilla strips all clamoring to be heard atop that lamb barbacoa. The unfortunate result: None is heard, and some very fine protein suffers.

Cristina Perachio is in the reviewer chair this week at Philadelphia Weekly. She takes aim at Blue Belly BBQ and finds its border-spanning barbecue is a success.
Standing at the pinnacle of the sandwich menu is the Korean beef sandwich; the meat is tender, juicy and full of sweet and savory flavor. Delightfully sour kimchi mixes with sweet pear ginger vinaigrette, threatening to reinvent your concept of what’s fundamental to the palate. It’s all topped with crispy shallots and sprinkled with sesame seeds that add an extra pop of nutty flavor.

The new barbecue joint from Cochon‘s Gene Giuffi, Blue Belly BBQ, will have its grand opening tomorrow at 11:30am. Blue Belly brings the love of meats Giuffi has already showcased at Cochon to a new level with American and world barbecue flavors. The menu features smoked meat platters, sandwiches with everything from Jamaican-style jerk chicken to Korean beef and Southern inspired sides.

On Wednesday June 20th from 6 to 9 p.m. Southwark will be hosting the good people of Philadelphia Brewing Company and those of the soon-to-be-open Blue Belly BBQ (also the guys behind Cochon) for a summer cook-out. Cochon chef-owner Gene Giuffi is opening Blue Belly BBQ at 600 Catharine Street in the original location of Little Fish. The casual lunch and dinner spot will specialize in barbecue but will not be locked into a specific style. Blue Belly will feature:
- Pulled Pork, Piedmont Style
- St.Louis Ribs
- “World BBQ” and “Street Food”
- Jerk Chicken Wings
- Bacon Onion Arepas
- Lamb Neck Barbacoa
Blue Belly will also offer a variety of traditional as well as ethnic dipping sauces, craft sodas, and casual desserts.
