City Aims To Take the Salt Out of Chinese To-Go Spots

The city of Philadelphia is working with Chinese take0ut restaurants to reduce the amount of salt added to dishes. The city is providing cooking lessons, tips and suppliers that sell low-sodium ingredients.

A recent series of tests found a 20% reduction of sodium used at takeout restaurants.

Get a Parking Ticket, Get Free Dan Dan Noodles

Han Chiang received a parking ticket while napping in his car yesterday. And his anger is resulting in free dan dan noodles for anyone who comes into the Old City Han Dynasty and shows the staff their own parking ticket.

Bigger and Better at Nan Zhou Hand Drawn Noodle House

Chef Zeng Feng Zhang has moved his Nan Zhou Hand Drawn Noodle House a block west on Race Street but the magic of the noodles remains. What Craig LaBan is most excited by are the new appetizers from the expanded menu.

An expanded menu, though, is the unexpected plus of Nan Zhou’s big expansion. In particular, don’t miss the surprisingly exotic chicken dumplings (fried is better than steamed), whose minced poultry fillings are flared with curry and rich coconut milk.

My biggest surprise, though, was the assortment of appetizers drawn from other regions of China. For vegetable starters, the shredded sea kelp tastes like snappy cold green noodles ignited with fresh garlic heat and sesame oil. Crunchy batons of raw turnip doused in sweet soy and vinegar are piled high with shriveled little fuzzy brown preserved plums that are as flavorful as they are ugly. The shredded potatoes are as addictive as they are a curious find in Chinatown, the cool, white, crunchy spud laces sparked with hot chile oil. Even more unusual, though, was the “gong” vegetable, a pickled green reminiscent of cactus in texture, but with a crunch so resonant, it rang in the back of my head like a bell.

About Last Night: Stillwater Dinner at Han Dynasty

Last night Han Chiang hosted a beer dinner at Han Dynasty with Brian Strumke of Stillwater Artisanal. The dinner featured five-courses and 15 or so plates of Han’s fiery food paired with Stillwater beers. Strumke, a gypsy brewer specializes in farmhouse style beers which pair especially well with spicy food.

Chiang was his bombastic self, stating “any American food, I can do better.” He made this statement as he dropped off a plate of sichuan French fries which were a compelling reason that he might be right. Chiang also stated he wants to do a food truck. No timeframe but he wants it to operate at Temple, where “there are no rules.” Chiang has also been scouting locations for a Han Dynasty in the East Village of New York.

Han Dynasty Modifies First Monday Tastings

Han Dynasty in Old City is modifying its first Monday tasting dinners but rest assured, it’s still a crazy good deal. Starting on Monday, January 7th, $25 will get you a dinner of the dishes Han Chiang discovered during his recent two month trip through China. Included are the likes of shredded jellyfish salad, spicy beef jerky, Sichuan prawns and braised bamboo.

The dishes are exclusive to the tasting dinner menus which are hosted by Han.

Han Dynasty In University City Hosting Voodoo Brewery Beer Dinner

Tomorrow, Thursday, November 29th, Han Dynasty in University City is hosting a beer dinner with Meadville, PA’s Voodoo Brewing. Han Chiang and Voodoo’s master brewer Matt Allyn will both be there, as will their collaborative Szechuan Imperial Russian Stout. The dinner begins at 7:30 p.m. and includes four-courses and beer pairings for $55.

It Takes Two at Spice 28

It’s a tale of two chefs at Spice 28. Chefs Danny Teng and “Mister Ma” churn out Sichuan and Asian-fusion fare. Trey Popp likes the price point and Mister Ma’s Sichuan specialties.

I’ve liked the Sichuan side of things the best. Dry-pot lamb was electric with ginger and Sichuan peppercorns. That ma la tingle also permeated one of the best (and prettiest) ma po tofu presentations I’ve ever tasted.

But Sichuan is more than just hot-and-numbing, and so is chef Ma’s cooking. The sourness of his quick-blanched, chilled potato shreds was bewitching. The sweet-hot cucumber salad? It’s on par with the version served at Han Dynasty.

Indo China Menu at Tiffin on Girard Debuts Tonight

Tonight the Tiffin location on Girard avenue will be debuting a new menu. Based around Indo-Chinese cuisine, the new menu features exciting dishes like Kung Pao Paneer, and Indo Thai fusion curry, and a selection of egg noodle entrees. All the new items fall under $20. Unfortunately this menu is only available at the Girard location, but hopefully the fusion will expand to the other Tiffin’s quickly.

The Revisit: Han Dynasty Goes West – University City Sichuan Outpost Reviewed

Remember all that nonsense a few years back about water sommeliers? How there were thousands of brands of bottled water out there, and pretty soon the world’s Michelin-steered gourmets would be perusing water menus to slake their thirst?

I know what you’re thinking: turns out the Great Recession had an upside, after all.

Anyway, I thought I’d forgotten about those H2O evangelists (and their unlikely apologists) for good—until a clear sip from a cold glass at the new Han Dynasty brought the memory gushing forth.
