If so, we’re looking for competitors who think they can work through the stress, the pressure, the heartbreaks and surprises that come from standing up before God and the food nerds and saying, “Yeah, I think I can cook better than that chump over there.”

Exec chefs need not apply (unless you’re interested in one of our Open Stove Masters events), but we’re looking for anyone else, exec sous and below, who thinks they’ve got a chance at surviving in our little culinary Thunderdome. Cook Masters Program: Meet The Class Of 2013

As we speak, the class of 2013 is beginning their first day of the COOK Masters Program–an intensive, hands-on class in breakdown and butchery being taught by Jon Cichon of Lacroix. They brought their knives. Most of them showed up in their whites. And the very first thing they get to face down? Taking the heads off of whole chickens brought in as their training materials for Day One.

We thought it might be nice, at this early moment in their education, to take a look at the 10 students making up this first Masters Program class. After all, if we here at Foobooz and the team at COOK all did our jobs well, some of these cooks will grow up into the chefs you’ll be reading about here in years to come. And now you’ll get to say that you knew all about them back before they were cool…

About Last Night: Open Stove 10 At COOK

Yeah, we did it again. Last night was the 10th installment of our Foobooz Open Stove series at COOK, and we celebrated with booze and food and dirty jokes and two great teams from two of the best restaurants in Philly.

On one side, we had Team SPTR, headed up by Mark Regan from the South Philly Tap Room. On the other, Team Zama, bossed by Kevin Yanaga of Zama. Both sides fought hard. Both sides put up some amazing dishes under odd (and seasonally-appropriate!) conditions. And in a rare moment for Open Stove, neither team panicked despite the fact that, this time around, they had every reason to.

What’s that you say? You couldn’t make it last night? Well that’s okay. You’ll get ‘em next time, tiger. But in the meantime, you’re lucky because we had COOK shooter Yoni Nimrod there taking snaps of all the action for us, so now you’ll know exactly what you missed.

Sneak Preview: COOK’s January Schedule

The New Year is nearly upon us and now is the time to make some serious changes in our lives. Your New Years Resolutions are most likely to include: being nicer to your mother-in-law, trying to only eat one piece of bread from the bread basket, starting to frequent the gym, and spending more time with family and friends.

Well, that’s a nice start, but we have a little advice on how to add a some more spunk and deliciousness to your list. How about a resolution to eat amazing Mexican street food? Or what about promising to have the best Italian Super Bowl party ever? Perhaps your list is missing a vow to make your loved ones the most incredible sweets they’ve ever tasted? Have no fear, because lucky for you, COOK’s new January schedule can make these resolutions come true.

Minus those ones about the bread basket, frequenting the gym, and your mother-in-law, that is… Those are up to you.

COOK Masters Series: Online Application Now Being Accepted

For those of you who have already submitted your applications for the COOK Masters Series, thank you. You can safely ignore this post (unless, like me, you don’t trust the post office or want to give yourself a digital do-over on your application).

For those of you who’ve been thinking about applying but are too lazy to find an envelope and stamps, today is your lucky day.

Because of the holiday, the lag in the mail and our own need to get this process moving quickly (classes start in about a month and a half), we’ve put together an online version of the application for the COOK Masters Series–which, if you don’t know, is the completely free professional-level cooking school being offered through COOK and taught by the likes of Joe Cicala, Michael Solomonov, Pierre Calmels, Peter Woolsey and other serious, heavyweight Philly chefs. If you’re an up-and-coming cook in the city, this is something you need to get involved with, because where else are you going to get the chance to hang with some of the best and brightest (and biggest employers) in town? If you’re thinking about a career as a chef, this training will be invaluable. And if you’re a talented amateur who wants to hang with the big boys, this is your chance.

Anyway, we now have a fully online version of the application available. All you need to do is fill it out, hit the “submit” button at the bottom and you’ll be in the mix for one of the ten slots available this first term.

COOK Masters Series: Now Taking Applications For First Quarter

Remember back a few weeks ago when we first announced that COOK was going to be offering a seriously cool, seriously hardcore, seriously professional-level cooking class where 10 hand-selected students would be trained over the course of 3 months by some of the best chefs in the city?

Remember when we told you that it was going to be free?

Well, we here at Foobooz are very pleased to announce that the syllabus has been set, the instructors have been booked, the dates have been confirmed and the first-ever term of the COOK Masters Series is now scheduled to begin on January 7, 2013.

And that, of course, means that we’re going to start taking applications for those ten available student slots starting today.

About Last Night: USA vs. Canada At Open Stove IX

Yes, it was an international rumble in Rittenhouse Square last night with a USA-vs-Canada, cross-border throwdown that pitted the pride of Detroit, Scott Schroeder (of South Philly Tap Room and American Sardine Bar), against Toronto’s own Nick Macri ,the charcuterie wizard of Southwark. It was a battle of the beards. It was a battle for national pride which, at a certain point, devolved into a drinking contest (as such things often do). It was an epic struggle between two chefs who may have forgotten some of their ingredients and left good sense at the door, but never forgot how much was riding on their victory or defeat.

It was Foobooz Open Stove Night IX and it was one for the record books. Thankfully, COOK’s faithful photographer Yoni Nimrod was there to capture it all on film. So for those of you who missed it, here’s a taste of how things looked from the inside.
