At Sbraga, chefs compete for bragging rights and to keep their minds nimble. Drew Lazor has the story.

“When we do these battles, we’re not holding back. If somebody’s at one level,” explained [Greg] Garbacz, holding his hand high above his head, “everybody should be at that level. This shows everyone where that level is – where they need to be.”

Drew Lazor’s Dad’s Sandwich Now on the Menu at American Sardine Bar

Hawk Krall’s Gatsby Combo was the first collaboration sandwich on American Sardine Bar’s menu. This month chef Scott Schroeder has worked with food writer and ASB neighbor, Drew Lazor to produce “Dad’s Sandwich.”

The sandwich is made of turkey and pork roll, then topped with cheddar, jalapeño, dijonaise and barbecue potato chips. It’s served on a buttery grilled Texas toast. It will be on the menu at American Sardine Bar all month.

10 To Watch: Drew Lazor Picks His Ponies

Over at City Eats, Drew Lazor has assembled a list of 10 up-and-comers in the food business who bear watching–not because they’re sneaky, but because he’s betting that they’re going to be the Next Big Thing in this town.

It’s a solid list, and does include lots of names that you should know–especially if you’re one of those coup-counting food nerds always trying to score points with your friends by being the first to know about everything. Of course, now that this list is out, your friends will know about these people, too, so now is the perfect time to start practicing your whole “Yeah, but I knew about Marcos Espinoza back before his beef jerky was cool…” speech in front of the mirror. You want to impress everyone even more? Tell them that Marcos was a male stripper before he became a dried beef impressario, but that he was only doing it to scrape together the cash to buy his first Jerk-o-Tron 9000.

That’s not true, of course (Marcos was actually a professional killer and part-time water polo handicapper), but it does make for a damn fine story.

Drew Lazor Covers James Beard Dinner at the Inquirer

Drew Lazor, former editor of CityPaper’s Meal Ticket blog, has moved on to bigger and better things. In a piece for the Philadelphia Inquirer, Lazor covered a pig dinner at the James Beard House in New York City featuring Philly’s top chefs.

The Philadelphia Pork Show featured Terence Feury of Fork, Michael Solomonov of Zahav, Peter Woolsey of Bistrot La Minetter, John Taus of The Corner, David Katz of Meme, and Jen Carroll. For $170 patrons got a peek at these chefs working together to create a pork feast much like those they do here at home. All six chefs cranked out a meal and managed to entertain the crowd and each other to boot.

Be sure to check out Drew Lazor’s great coverage of the event. Who knows where Drew will pop up next (though if we were betting, we’d say American Sardine Bar).

Central American Jewel in South Philly

This week the Weeklies are about the Rooster. Yesterday Brian Freedman reviewed the Happy Rooster for Philadelphia Weekly and today Drew Lazor takes a look at El Gallo Pinto, a Central American eatery in South Philadelphia.

While it’s pretty hard to go wrong here, there are two dishes you absolutely must try. Stop by on a weekend for the first, Vallecio’s rejuvenating sopa de res, where potato, carrots and greens meet fatty sections of beef tail in a bay leaf-scented broth so captivating that it’s almost at odds with its comfort-food compatriots. Then there are the Nacatamales Nicaraguense, the $4 wonder dish responsible for forever ruining the Mexican corn husk tamal for me. Order one and you’ll get a once-strung-up plantain leaf, its insides bursting out onto the plate like a delicious deleted scene fromAlien — fork through the creamy (thank you, lard!), light-yet-substantial yolk-yellow masa base and you’ll find bits of succulent pork, rice and tomatoes, plus whatever other add-ins the kitchen feels like tossing in that day. It’s such a satisfying, smile-inducing dish that Vallecio says her best customers tend to show up in the a.m. and order two — one for breakfast, one for lunch. See you in the morning.

Chaat Primer

Drew Lazor finds out what chaat is at Desi Chaat House in West Philadelphia.

Visually, chaat is something like taco dip that believes in dharma, with multiple layers representing multiple textures. Start with the classic papri chaat, papri (hyper-crunchy white-flour wafers, not unlike fried wonton wrappers) studded with spiced potatoes, chickpeas, big hunks of raw red onion, cilantro, a thin, cooling yogurt and cubed mango that adds a smirking sweetness.
