Sunday Brunch at Fitler Dining Room

Fitler Dining Room has certainly got the town buzzing this week. this week. First, Craig LaBan handed out a stellar review in the Sunday Inky, then they added soft-shell crabs to the menu (which is a sure-fire way to rile up the locals), and now they have added a brand new Sunday brunch.

Filter Dining Room Charms in a Charmed Space

Brian Freedman extols the virtues of Fitler Dining Room, the most recent occupant of the charmed space that is the northwest corner of 22nd and Spruce.

For the short period of time that Fitler has been open, its food is remarkably confident: The distance between the intent of each dish and its execution is virtually nonexistent. And the way it straddles the line between higher-concept and comfort is something that many restaurants far further along in their evolution still struggle to achieve. Tagliatelle, hand-cut and tender, arrives all tangled around nettles, spring peas and ramps. Smoked chèvre melts when the hen egg nesting in the center of it all is broken and mixed into the noodles, creating a deeply flavorful sauce and providing a perfect framing mechanism for those bright spring flavors. Braised beef cheek arrived all shimmering black like some sort of lacquered jewelry box. For a chilly, early spring evening, it was perfect.

LaBan Pours Out the Praise for Fitler Dining Room

Craig LaBan visits Fitler Dining Room, the newest restaurant from the team from Pub & Kitchen and Avalon’s Diving Horse, and comes away impressed.

There should be no complaints, though, about Marzinsky, whose Philly debut as a head chef has been one of the year’s biggest revelations. His butter-poached oysters are such an elegant modern riff on stew that they’d make his muse, M.F.K. Fisher, consider the oyster anew. Ever-so-lightly poached, they’re placed atop brioche croutons with a fine dice of potato, fennel and celery root, then lavished with a froth of rich chowder cream poured tableside. His raw Beausoleil oysters, on the other hand, are transformed with just a few jewels of smoked trout roe and ginger mignonette, each gulp a three-part fade from tang, to smoke, then brine.

A clever new technique for gnocchi results in ethereal puffs of meltaway potato dumplings. But it is the elegant contrast of textures and vivid colors – snappy toasted hazelnuts, tender earthy snails, tart pickled snips of pink ramp, and a pale green gloss of Chartreuse butter – that makes the dish so memorable.

Fitler Dining Room Opens This Evening

The Pub & Kitchen crew and chef Robert Marzinsky open the doors on their attractive Fitler Dining Room this evening. Last night we were lucky enough to try out the new restaurant and can report back that the gnocchi with snails, tartare of Lancaster beef and Truffle+Leek Stuffed Skate Wing were all among the highlights.

First Look: Fitler Dining Room

Activity has been amping up at Fitler Dining Room. The new restaurant from the crew behind Pub & Kitchen will open to the public this Thursday, February 21st.

The thirty-two seat restaurant features an open kitchen, subway tiled walls, handsome leather banquette and welcoming sofa. A four-seat  bar faces chef Robert Marzinsky’s open kitchen. Marzinsky has been the chef de cuisine at P&K’s other fine dining sibling, Diving Horse in Avalon, NJ. Marzinsky was also on the opening staff of Stateside and has worked at Pub & Kitchen. Fitler Dining Room’s menu will feature an American bistro concept balanced between land and sea. Appetizers run from $8 to $14 with entrees coming in between $18 and $26.

Fitler Dining Room will initially be open for dinners only, with brunch being added down the line.

Pub & Kitchen Crew Opening Fitler Dining Room Soon

In other Pub & Kitchen related news, Fitler Dining Room (the former Meme) is opening soon. In the kitchen will be Robert Marzinsky. Marzinsky has worked at Pub & Kitchen and been chef de cuisine at The Diving Horse in Avalon. He’s also been spotted in the kitchen of Stateside alongside George Sabatino.

Expect American-bistro fare with reinterpretations of dishes like:

  • Butter Poached Caraquette Oysters with potato and fennel chowder, parsley puree and brioche crouton
  • Porcini Poached Chicken Breast with savory bread pudding, braised turnips and black trumpet gravy
  • Potato Gnocchi with Burgundy snails, hazelnuts, winter truffle and chartreuse butter.

Fitler Dining Room will not offer spirits but will serve a selection of wines and beers.

Spotted: Letter to Neighbors at 2201 Spruce Street

Dan Clark of Pub & Kitchen has hung the above letter in the window of the former Meme at 2201 Spruce Street. The letter details Clark’s plan for the space. It will be a 36-seat restaurant that will not serve hard alcohol and will not offer live music or entertainment.
