Dock Street Brewing and their partners at the Four Seasons are continuing their collaborative beer seasons. Yesterday was brew day for their summer beer, Crackle and Squeeze. Look for this beer, made with meyer lemons and cracked pink and black peppers to debut during Philly Beer Week.
Right now, you can still drink the spring seasonal, O.P. Yum (oates and pomegranate beer) at The Lounge in the Four Seasons. A reasonable way to end an afternoon of museums or Center City shopping.

Once upon a time, great restaurants provided great service. But over the years, jackets have been lost, shirttails have come untucked, staffers have become less formal, and nostalgists have mourned the demise of high-end dining. Today is Auguste Rodin’s 172nd birthday and Google has graced its homempage with a homage to the French artist. And since the Philadelphia has a newly reopened Rodin Museum and the most Rodin work outside of France, the Four Seasons on the Parkway is also celebrating with a special cocktail, “The Thinker.”
Get the drink at the Swann Lounge or make it yourself.

The fourth and final collaboration in the Dock Street Brewery-Four Seasons Hotel Beer Four All Seasons series is debuting tonight at 6pm at the Swann Terrace at the Four Seasons, accompanied by dollar oysters. This last brew, Spanish Fly, has been created with aphrodisiac herbs from the Four Seasons rooftop garden and will be available on draft and in champagne style bottles at the Swann Lounge.
Spanish Fly ends the Beer Four All Seasons series which began with the Truffled Old Ale, brewed with winter truffles last January, and includes the Caliente Golden Ale brewed with chiles in April and the Cherry Verbena Saison which debuted during June’s Philly Beer Week.

The second collaborative beer between Dock Street Brewing Co. and the Four Seasons Hotel is set for release on Monday, April 16th. Caliente Golden Ale, a beer brewed with chiles will be officially unveiled at 6 p.m. at the Swann Lounge.
Executive Chef Rafael Gonzalez will be pairing the beer with charred shrimp ceviche with roasted pineapple, citrus and plantain chips as well as adobo marinated chicken tacos with Jicama-Serrano salad and avocado as selected food pairings.

The Fountain at the Four Seasons is closed until January 17th. According to the PR person we spoke to at the Four Seasons, the four-bell restaurant is closed for routine maintenance that will only affect the kitchen, there won’t be any guest-facing changes. In the meantime the Swann Lounge is open for business. So it seems this construction will not address any of the issues raised by Victor Fiorillo in this Philly Post article.
In other Four Seasons news, Dock Street Brewing is brewing a series of collaborative beers to be offered exclusively at the Swann Lounge.

The With Love Beer Garden at the Four Seasons Hotel which was quite the hit during Philly Beer Week is making a return appearance this month. Every Thursday in August the garden will be open from 5 to 8 p.m. serving up Victory’s With Love Summer Ale plus a rotating selection of other Philadelphia brewers.
The hotel will also be offering its summer sangria and dishes from the grill including the Philly Beef Slider with pork roll, steamed Jersey clams and a Port Richmond kielbasa sandwich.
We really hoped the beer garden would be extended and look forward to hitting it up in August.

Despite changes in the kitchen, Craig LaBan finds the the Fountain inside the Four Seasons is still worthy of 4-bells. In fact he finds the restaurant so good he goes out of his way to mention just about everyone by name.
No doubt dinner here is still a gold-plated indulgence. But compared with the astronomic fees people now eagerly pay for grilled slabs of beef, this is a fair price for a genuine expression of culinary art. And this kitchen’s amazing consistency is, more than anything, a tribute to the longevity of its talented kitchen stalwarts – night chef David Jansen; chef tournant William DiStefano; day chef Ralph Costobile; banquet chef Joe Drago; and pastry chef Eddy Hales – who have more than a century of Fountain experience among them.
Unlike some kitchens, though, that august experience has never translated into stale cooking. Quite the contrary: The Fountain remains one of the most vital, worldly and witty kitchens in town. “Steak and eggs,” for example, will never be the same for me after the Fountain’s rendition, a rosette of beef carpaccio topped with crispy rails of Pont Neuf potatoes and a comet-shaped orb of tempura-fried egg yolk, whose exquisitely delicate micro-crust released a brilliant yellow gush at the tap of a fork.
