We promised we’d get back to Supper’s Harvest Week. Tonight the South Street restaurant is tapping Dock St. Man Full of Trouble Porter cask-aged in apple brandy barrels.
First, a small quantity of Man Full of Trouble was aged for several months in an emptied Apple Brandy oak barrel. Â Then, like the old vatted Porters of England and Ireland, the beer was blended with “stale” beer which had been aged and for over a year. Â During this time the “stale” beer acquired a strong acidity from wild yeasts and bacteria. Â The result of the blend is a complex and delicious brew with notes of caramel, espresso and chocolate balanced by hints of apples and brandy along with a tart and “wild” acidity lent by the stale beer.
Supper is also debuting their new Farm House Table this week. The table seats eight people and is available for one seating, per evening Monday through Thursday. The Farm House table can be reserved for $50 per person and a special family style three-course supper will be served.

Bryan Sikora has landed at a new restaurant in downtown Allentown. He’s the chef at the Cosmopolitan, a new multi-level restaurant with grand ambitions.
The restaurant opened earlier this month with a farm-to-table concept opposite Allentown’s Symphony Hall. The building’s first two floors makeup the restaurant with catering facilities above that. There will also be a rooftop bar overlooking the city.

Brian Freedman really likes Tweed, a restaurant that makes “fresh and local” more than a buzz phrase and turns it into an exciting addition to Philadelphia’s restaurant scene.
Sauteed pork chop was Chef Cunningham’s riff on the barbecue of the season, and it hit all the right notes. A Fred Flintstone-worthy bone-in chop was plated atop a mound of rainbow Swiss chard and covered in a comforting blanket of cheddar-reinforced creamed corn. And despite the drama of that hunk of pork, it was the toppings that were most remarkable. Star anise, cinnamon and vanilla brought an exotic perfume to all- American corn. And the barbecue sauce (spicy, tangy and complex from Boylans birch beer, smoked garlic, hickory, coffee, chiles, vinegar and more) enhanced the pork’s own flavor without dominating it.
