Adam Erace Reviews Brü Craft & Wurst

Posted by Sam Bloch on May 20th, 2013

bru-mixed-meats-wurst-plate

Adam Erace goes with the mixed meats and wurst platter at Brü Craft & Wurst for $48, and enjoys almost all the kitchen has to offer.

Like I nearly did under the onslaught of food. Gose in hand (tepid, with a sputtering fizz), the Drury Street breeze fanning me like a boxer’s cornerman, I prepared for the arrival of the hulking $48 mixed-meats-&-wursts platter, which [chef Matt] Buehler describes as “basically the whole menu.” The carnivore carnival sees a dam of pointy, crispy, skin-on fries, the juicy, edgy, whey-fermented kraut (whose secret accelerator I’m stealing for home) and potato-apple latkes constructed for a slew of proteins. There were sausages both housemade (fresh pork greened with marjoram and chive, liverwurst) and from seminal Fox Chase butcher Reiker’s (veal-and-pork weisswurst, a smoky Hungarian-style link), plus pork meatballs, falling-apart braised bacon blocks, curls of pink Westphalian ham and a slab of melting braised pork rib whose tangy glaze was inspired by, according to Buehler, Chinese sweet-and-sour sauce. Not hardcore like Brauhaus, indeed.

But don’t let Buehler’s self-deprecation fool you. This veteran of Striped Bass, Oceanaire, Kraftwork and Bar Ferdinand has sunk more care and energy into this menu that he probably needs to. Those French fries? Brü would be within its rights to use frozen. They don’t, and they’re some of the best in town. The lightly funky liverwurst, poached like a terrine, sliced and seared until dark and crunchy, brought to mind a more finessed scrapple, veined with ground bacon and pork liver.

A German Beer Garden for Chestnut Street

Posted by Foobooz on January 23rd, 2013

Ripped from the Foobooz job listings. A German inspired beer bar is coming to the former Mitchell & Ness store at 1318-20  Chestnut Street. Teddy Sourias who owns Finn McCool’s at 12th and Sansom is behind the project that is aiming for a late February, early March opening. We hear the interior will resemble the interior of a German beer garden.

There will also be a kitchen preparing German food, so if that floats your boat, check out the job listing. For some sneak peek photos of the construction, check out the Philadelphia Real Estate Blog.

Hot Sandwiches Are Now Being Served at Wursthaus Schmitz

Posted by Foobooz on December 6th, 2012

When Wursthaus Schmitz opened just about a month ago there was much rejoicing but one thing was missing, hot sandwiches. Delays in getting the hood installed and inspected had delayed that part of the Reading Terminal Market German delikatessen.

But now that has all bee squared away and Brauhaus Schmitz’s sibling is offering five sandwiches including The Schmitz, a Brauhaus Schmitz bratwurst topped with mustard (eventually it will be served on a pretzel roll, but they’re waiting on the order).

Wursthaus Schmitz Now Open at the Reading Terminal Market

Posted by Alex Tewfik on November 6th, 2012

Wursthaus Schmitz, the highly anticipated Reading Terminal Market outpost from the team behind Brauhaus Schmitz, has finally opened. For those of you ready indulge in beautiful German fare (yes, we said “beautiful German fare”), go indulge. One complication though: the hot sandwiches and platters won’t be available for another week or two, but as soon as their hood clears its final inspection, you’ll be throwing down some bratwursts like nobody’s business.

But for now, you’ll still be able to stock up on Reiker’s goods, ranging from spaetzle to breads to authentic German condiments. That, paired with Jeremy Nolan’s famous rightfully house-made pretzels, charcuterie, and spreads makes for more than enough of a reason to stop by and luxuriate in the Little Germany they’ve created for us.
