Drunken Brunch Alert: Whiskey & Waffles At Ela And SPTR

Apparently Jason Cichonski likes a “girly” shot aptly named “Pancakes & Syrup,” and that will be the first course of the Whiskey & Waffles collaborative brunch between Cichonski’s  Ela and South Philly Tap Room’s Scott Schroeder and Mark Regan.

This St. Patrick’s Day, (Sunday, March 17th), from 10:30 am-2:30 pm, for only $35 a head (with an optional $20 whiskey pairing), Ela and SPTR want to be the ones to kick off your celebrations. The menu looks awesome–including such guaranteed winners as hash browns with bone marrow gravy, cereal-crusted donuts with cereal milk filling, coffee-coddled eggs over duck hash and the aforementioned Whiskey & Waffles (sausage waffles with foie gras whipped cream and smoked maple-whiskey syrup)– and starting off your Sunday with a morning shot doesn’t seem all that bad, because, you know, YOLO or whatever.

Ela Adds Brunch Starting This Sunday

This Sunday Jason Cichonski kicks off brunch at Queen Village’s Ela. Biscuits, Benedict, bone marrow and butternut squash highlight the fall flavors, and that’s just the “B”s. Among the other brunch highlights, ginger snap pancakes, cranberry crepes and short ribs benedict. Accompanying Cichonski’s food will be craft Bloody Marys, spiked Vietnamese iced coffee and a caramel apple mimosa.

Lacroix’s 10th Anniversary Dinner

To celebrate Lacroix’s 10th anniversary the restaurant will be holding a special dinner on September 17th(dinner has been changed to Monday, September 24th). The dinner will be created by ten of Lacroix’s past chefs from over the years, each coming back under one roof for one night only. The cost of the dinner is $350 (tax and tip included) for hors d’oeuvres, a ten-course meal, and wine pairings, a portion of the proceeds goes toward a Lacroix scholarship through the James Beard Foundation.

About Last Night: Hop Chef

Last night I was lucky enough to judge Ommegang’s Hop Chef competition at World Cafe Live. Six excellent local chefs put their best foot forward to compete for the right to represent Philadelphia in the Hop Chef finals at Brewery Ommegang’s annual Belgium Comes to Cooperstown festival. In the end it was Stateside’s George Sabatino who won with his two dishes, the first was a lettuce wrap of smoked beef cheek with watermelon rind, pickle and beer broiled peanuts; the second was a dessert Sabatino made with the help of his pastry chef, Robert Toland. The “Three Philosophers with head to tail cherries” ingeniously included pop rocks to mimic the carbonation of the beer. Both were impressive dishes, especially how Sabatino lightened the heavy beef and beer with watermelon and the lettuce wrap.

Who Will Become Philly’s Next Hop Chef?

The Ommegang Hop Chef event is coming up and Philadelphia Weekly has all the details on that road trip four competing chefs took to Brewery Ommegang to prepare for the event on Tuesday, July 10th. Between Joe Cicala, Nick Elmi, Scott Schroeder, and George Sabatino the night gets a little wild. Highlights include: lots of jokes about Jason Cichonski, aka “The Pretty One” and many uses of the word “hashtag” aloud in regular conversation.

Be sure to check out the Hop Chef competition next Tuesday at World Cafe Live — our own Arthur Etchells will be judging the chefs’ two beer-inspired dishes alongside Jen CarrollEmilio Mignucci from DiBruno Bros and Mat Falco from Philly Beer Scene.

“Foie Fridays” Starts Tomorrow

In protest of the recent foie gras troubles in California (where a complete Nanny State ban on foie gras is due to take effect on July 1), Philadelphia chefs are teaming up to support their West Coast brethren in fighting the good fight. In order to bring a little light and make a little noise, chefs like Jason Cichonski of Ela have called on their colleagues to bring foie gras to the people.

The result? Foie Fridays. And the first one is tomorrow.

Jason Cichonski’s New Happy Hour(s) At Ela

Starting next Tuesday, May 22nd, chef Jason Cichonski is doing Happy Hour His Way and bringing his usual twists to the traditional post-work celebration. Challenging the status quo, Cichonski’s happy hour(s) at Ela will be Tuesday through Friday and Sundays from 5-6:30pm.

Rotating drink specials (like $3 draughts, $5 wines, and $6 cocktails) will be at the bar, and an ever-changing menu will be available as well. Dishes will change per Cichonski’s whim (read: often, and probably without warning) but at any time might include…

More Praise for Ela

Brian Freedman is the latest to heap praise on Jason Cichonski and his Queen Village restaurant, Ela. Only thing different is that Freedman was not particularly impressed with the scallop noodles.

[T]he best dishes at Cichonski’s Ela are generally the most seemingly classic ones, where modern touches were couched in a context of necessity. The skate arrived curled up like some sort of loose nautilus shell, its butter-browned flank a visual reference to the addictive whole-grain mustard crisps off to the side. Pureed sunchoke added further nuttiness to main components that alone would have been a pleasant and earth-toned composition. But like the best chefs, Cichonski often adds a final twist. Here it’s a vivid tangle of vinegary cabbage braised with mulling spices. This was the spark that ignited the other flavors on the plate. Nothing fancy, nothing precious: just cabbage, treated with respect and wit. Gorgeous.

Art In The Age Dinner At Ela: First Look At The Menu

 On Tuesday, March 13th, known weirdo (and dreamboat) Jason Cichonski will be pairing his love for odd flavor combinations with products that revel in their own small-batch intellectual complexity when he hosts a five-course dinner at Ela, complete with custom cocktails featuring ROOT, SNAP and RHUBY from Art In The Age.

Under normal circumstances, this would be just another booze-pairing event. But it’s Cichonski’s involvement that makes it a curiosity. Those of you who read Trey Popp’s recent review of Ela understand that Cichonski operates with a strange, Rain Man-like facility when it comes to designing dishes. He sees things on the street that kinda look like other things in his pantry, so builds a dish around them. He makes some mistake during testing an experimental entree and ends up constructing an entirely new dish around some accidental juxtaposition of flavors. So when you give someone like that access to the already complicated flavors of the Art In The Age products, who knows what’s going to happen.
