Southwark’s Nick Macri wowed the judges last night with his “You Can Win Friends with Meat Salad,” an ode to Homer Simpson. Where most of the chefs chose one pairing principle (simple pairing, incorporation, mimicking, story telling and experimental), Macri included all five in his Ommegang Hennepin-based dish and that was enough for the win. But the coppa with ginger-pickled chiles, grains of paradise bread crumbs, ballpark nuts, and orange-coriander-cured sauce wasn’t the only dish that impressed. JG Domestic’s Yun Fuentes won the People’s Choice with his duck arepa and Ommegang Rare Vos glaze. And Fork’s Eli Kulp created a first-of-its-kind treat in his Crackerjack-topped beer rye pretzels.
If you were there, you know how good everything was. If you weren’t, the best we can offer you are pictures, shot by COOK photographer and Friend of Foobooz, Yoni Nimrod.
Enjoy…

Baking pies is hard work, and, more often than not, is well worth that work. Jose Garces and his Executive Pastry Chef Jessica Mogardo decided to take the work out of your hands and into theirs. They’ve come up with four different pie concepts that are sure to please the crowds: Pumpkin-Gingerbread; Chocolate-Pecan; CCC (Cherry, Cranberry- Cornmeal); and their instant-classic ABC (Apple, Bacon, Caramel). Each pie serves approximately 6 to 8 people and costs $35. Pick them up at Garces Trading Co. or JG Domestic.
Seasonal pies can be ordered online for pick-up throughout the holiday season or in person at either of the pickup locations. Orders must be in by noon for next day pick up.

Though it isn’t even unofficially summer until Memorial Day, Jose Garces is kicking off the season early this year with a clambake at JG Domestic on Wednesday, May 23rd at 6:30 p.m. For $55 patrons get a family-style seafood dinner and unlimited pours of six featured Allagash Brewing Company beers.
The menu for the night starts with house-made dried pork sausage and “cave-aged” Landaff cheese. For the main course guests will be served a garden salad made from ingredients grown in Garces’ Bucks County farm, as well as cod chowder and a clambake of little neck clams, Maine mussels, shrimp, and sausage. And for dessert? Whoopie pies.
As important, the Allagash brews paired with the meal include: White, Dubbel and Triple, Curieux, Black, and Four, “brewed with four malts, four sugars and four hop varieties and fermented four times with four different yeast strains.” Sounds intense.
For clambake-and-unlimited-Allagash reservations call 215-222-2363 of go online.
