Iron Chef and James Beard Awarding winning chef Jose Garces has opened Yuboka, a new restaurant at Revel in Atlantic City. Yuboka serves dim-sum, Asian-inspired small plates, and bowls of noodle soup. The 36-seat noodle bar, right next to Amada on the casino floor, is designed for a quick, cheap meal and takeout for lunch, dinner, and late-night dining. Highlights include chicken wings with spicy garlic-ginger sauce; a lamb burger; seafood noodle soup with poached shrimp, crab, Taiwanese barbecue sauce, crispy shallot, and udon noodles; and dumplings, some of which will be brought in from Philadelphia’s Dim Sum Garden. The restaurant will also serve cocktails, beer, wine, sake, and tea.
Garces is also bringing his Distrito Cantina Food Truck (formerly Guapo’s Tacos) to the boardwalk at Revel Beach. Every Saturday and Sunday from Memorial Day through Labor Day from 12 p.m. to 6 p.m., the truck will be serving up Garces’ Mexican bites for beach-goers to enjoy.

Food & Wine makes a list of the best bacon burgers in the country and curiously choose Shake Shack’s SmokeShack burger as Philadelphia’s best. True, the 20th Street location was the first Shake Shack to feature the SmokeShack as a regular menu option and we are fans of the New York based chain. But look around, like really, look out the window from Shake Shack and at Village Whiskey. In a list of bacon on burgers, it is difficult to imagine ignoring Village Whiskey’s Whiskey King. The $26, half-pound of beef burger, topped with maple bourbon glazed cipollini onions, Rogue blue cheese, applewood bacon and for good measure, foie gras has to be in the conversation.

Last week, our own Iron Chef, Jose Garces, hit the James Beard House in New York to cook a dinner in support of his new cookbook, The Latin Road Home. And while we weren’t able to get to the Beard House ourselves, we did get our hands on some pictures taken by Jeff Gurwin who was there to capture all the action.

This Thursday, Jose Garces‘s Basque-inspired restaurant, Tinto, will be hosting the first in their new series of pairing dinners. For the first menu out of the gate, they’re doing rare, aged and “coveted” Riojas and setting them up against the seasonal Basque fare of chef de cuisine Dave Conn.
The dinner will run you $100 per person. Seating is limited. Reservations are required. And as of right now, there are still some seats available. Yeah, they’re pricey, but the Garces team is calling it “an extravagant tasting and dinner” and I’m not going to argue. Check out the full menu and pairings after the jump.

It’s Chifa’s fourth anniversary and Jose Garces’ Asian/South American amalgamation is celebrating with a special tasting menu from now until Sunday, February 10th. The four-course menu is $65 per person and includes dishes like bigeye tuna tiradito, pork buns and rack of lamb.

Baking pies is hard work, and, more often than not, is well worth that work. Jose Garces and his Executive Pastry Chef Jessica Mogardo decided to take the work out of your hands and into theirs. They’ve come up with four different pie concepts that are sure to please the crowds: Pumpkin-Gingerbread; Chocolate-Pecan; CCC (Cherry, Cranberry- Cornmeal); and their instant-classic ABC (Apple, Bacon, Caramel). Each pie serves approximately 6 to 8 people and costs $35. Pick them up at Garces Trading Co. or JG Domestic.
Seasonal pies can be ordered online for pick-up throughout the holiday season or in person at either of the pickup locations. Orders must be in by noon for next day pick up.

Ever wondered what it would be like to mix your favorite sushi dish with the classic Spanish paella? Chef Hiroyuki “Zama” Tanaka wants you to wonder no longer with his Garces Chirashi. The latest in a series of collaborations for charity, the Garces Chirashi is a kind of Japanese paella in collaboration with–you guessed it–chef Jose Garces. One dollar from every dish sold will be donated to the Garces Family Foundation, a charity benefiting immigrant families in Philadelphia.
Garces Chirashi is served in a bowl, over sushi rice and includes:
- Head-on Madagascar shrimp
- Diver scallops
- Spanish baby octopus
- Hamachi sashimi
- Madai sashimi
- Kurobuta pork sausage
- Edamame, avocado and mixed Japanese herbs (kaiware sprouts, mitsuba leaf, myoga)
- Espelette pepper aioli
- Saffron sushi rice

It is three wins in a row for Team Vetri as the squad defeated Team Garces 25-21 at Franklin Field in the fourth annual flag football game between the two restaurant groups. It was an intense game through the final snap. And all for a good cause with $5,000 going to the Vetri Foundation for Children.
