Russet Updates Its Brunch Menu for 2013

Russet is extending its brunch hours and also changing up its weekend brunch menu. The hours are now Saturdays from 10 a.m. to 2 p.m. and Sundays from 10 a.m. to 3 p.m.

The brunch menu features housemade pastries with jams (also available for retail) and seasonal pancakes inspired by owners’ Andrew and Kristin Woods’ five-year old son, Gus. Also expect an ever-changing menu of dishes like house-smoked sustainable trout, a duck confit croque madame and chestnut omelet with ricotta and apple mostarda.

To drink, the BYOB offers Counter Culture coffee and espresso, house-made sodas, fresh squeezed orange juice and Bloody Mary mix.

Now Open: 15th Street’s Tietra, Not Titra

Way back in November 2011, Michael Klein told us that restaurateur Victor Fellus was hoping to open Mediterranean spot Titra in the base of 15th and Locust’s Aria condominiums. But there was a misspelling of the name on a sign, which led to suppliers misspelling the name on invoices, as Klein later reported, and so the restaurant is now called Tietra, which is a much better name, anyway. It opened on Tuesday. Garces Family Foundation Fundraiser Happening Next Week

A few weeks back, we let all you charity-minded gastronauts know about the upcoming launch of the Garces Family Foundation and the big party that they were throwing to introduce themselves to the community. And now that the party is coming right up (it’s on October 10 at the Kimmel Center), we’ve decided it’s time to remind you again.

In case you’ve forgotten, the Garces Family Foundation is a charity founded by our own Iron Chef, Jose Garces, and his wife, Dr. Beatriz Garces, which will serve to help Philly’s growing immigrant population through after-school programs, community outreach, tutoring and medical care through a partnership with Puentes De Salud. All that stuff, though? That’s gonna cost some serious green. Which, of course, is where you come in.

As a first fundraiser, the party that’s happening on October 10 is a killer. There will be hordes of big name chefs, lots of food, plenty of booze and a beautiful location–no matter whether you’re coming in for the General Admission price ($200) or springing for one of the newly-released VIP tickets, priced at $1,000 a head, but worth it if you’ve got that kind of scratch to throw around. Craig LaBan Sees Potential in Russet

Craig LaBan sees the potential in Andrew Wood’s Russet to be one of Philadelphia’s best restaurants. But before that happens some loose ends around the entrees will have to be taken care of. But the appetizers, well they’re already excellent.

Housemade lonza, chile-cured from the loin of Tamworth pigs Russet buys whole from Lancaster County, comes sliced into a translucent amber rosette draped with pickled ramps, blanched celery leaves, and a rustic green oil with mortar-crushed herbs. Stinging nettles, plucked for the restaurant by urban forager David Siller, are spun into silky strands of forest green tagliolini, glazed with the capery anchovy piquance of bagna cauda, and then set beneath a lightly broiled yolk that bursts into sauce at first touch.

Russet Brings Traditional Craftsmanship to the Table

Trey Popp visits Russet, the new BYOB from Andrew and Kristen Woods.

The Woods’ seasonable-and-sustainable credo is familiar, but their Old World sensibility gives Russet a traditionalist rather than trendy vibe. He makes pastas from Lancaster wheat, rolling out some shapes on a chitarra crafted by an old artisan in Chester County. She makes a butterscotched, Calvados-creamed apple mille-feuille that’s to die for.

Jose Garces’s Global Domination Infographic

It wasn’t so long ago that local boy Jose Garces had just one lonely address in Philadelphia. Look how things have changed in just five short years.

And he’s not stopping at 18. Garces Catering is taking over all catering and concessions at Kimmel Center for the Performing Arts as of June 1st.

Garces also has plans to open a full-service restaurant this winter at the Kimmel Center with an entrance at 15th and Spruce streets.

Russet Now Offers Weekend Brunch

Chef-Owners Andrew and Kristin Wood are now offering brunch at Russet. The BYOB is offering seasonally-inspired brunch dishes every Saturday and Sunday from 10 a.m. till 2 p.m.

Andrew’s savory dishes will show off his expertise in butchery and charcuterie.

Tashan’s Top Five Dish

Tashan continues to get praise from the critics. In the same issue of GQ in which Alan Richman praises Mica as one of the top ten new restaurants in the United States, Richman also singles out Tashan as serving up one of the best five dishes of the year.

Here’s one possible three-course dinner  you could have at Amis for a dollar less than that. And it is a meal that wouldn’t be chosen from a pared down menu and dealing with a stressed out waitstaff.

Sbraga in the Real World

Trey Popp finds that Kevin Sbraga can really shine at his eponymous restaurant on Broad Street.

Over-cute missteps and fast-corrected blunders aside, Sbraga more often showed a rare ability to make the smallest detail stand out. His apple cider miso-glazed black cod was good enough to order twice even without the bok choy chip that shattered on the tongue like a brittle autumn leaf. Yet my most memorable bite of that dish was a forkful of bacon-y adzucki beans bearing a single cilantro leaf. It’s hard to say why—hard even to know why—but it was just so right.

Two and a half stars – Good to Excellent
