Soft shells with shoshito and honey at Stateside

We here at Foobooz World Headquarters have a soft spot for soft shell crabs. Some might get bummed out by the thought of biting through a shell, devouring a whole animal and all that. But us, we love the idea of crabby taste without the hustle or frustration of shucking anything. And softshell season is officially upon us. The delicious creatures have been showing up on more menus around town over recent days.

Here are where we’ve spotted soft shell crabs »

An Inside Look At Morgan’s Pier

Posted by Jason Sheehan on April 29th, 2013

Sous-vide cheeseburgers, hand-made tofu, a full-on vegetarian menu, ice cream sandwiches and a backyard barbecue vibe? Hell, yeah.

Over on the Zagat blog, Danya Henninger gets a look behind the scenes at Morgan’s Pier–now preparing for its scheduled May 9 opening under exec chef George Sabatino and chef de cuisine Paul Lyons. She talks to the young gentlemen about the staggering size of the place, the rapidly approaching opening date and how the menu is shaping up, then makes it out with a few pictures of the work in progress.

Of course, if you want to see a whole bunch more pictures, just check out Sabatino’s instagram, where he’s documenting much of the run-up to the opening.

An Update on Morgan’s Pier

Last night we chatted with George Sabatino about his ambitious plans for Morgan’s Pier. There will be at least three menus for the 300+ seat space. The standard menu which will feature the burger dropped in liquid nitrogen (served on a Martin’s potato roll) plus a more ambitious menu that will be available in the newly carved out 80-seat restaurant area. There will also be a kids menu that will include a healthy fruit salad side for the youngsters.

Sabatino has hired 19 line cooks and puts them to the test in early May. Morgan’s Pier will open to the public on Thursday, May 9th.

More News As Morgan’s Pier Staffs Up

Posted by Jason Sheehan on March 20th, 2013

Things are starting to come together for the summer season at Morgan’s Pier. Last week, I talked with George Sabatino after he announced that he would be taking over the top slot there and he told me that he already had one of his lieutenants chosen–Paul Lyons, ex of Barbuzzo and a long-time friend who would be working as Sabatino’s chef de cuisine.

And now we know that Sabatino has pulled in another talent. According to the Insider, He’s got Pat Cancelliere in the kitchen, too, standing as a sous chef.

Cancelliere recently closed his Argentine-Italian spot, 943, in the Italian Market, which was a big loss for that neighborhood. After locking the door at 943 behind him, he moved on to a short turn at Bainbridge Street Barrel House. And now Morgan’s Pier, which is due to light the fires for the start of prep and menu testing in the first week of April.

George Sabatino To Morgan’s Pier For The Summer

Posted by Jason Sheehan on March 15th, 2013

“The first time I saw the place, all I could think was, ‘This is fucking bad ass’.”

That’s George Sabatino, the very-recently-ex chef of Stateside, talking about his newly-announced gig as chef at Morgan’s Pier. And the bad-assery to which he’s referring? That’s not the space (the size of which frightens him more than a little). That’s not the view (which is lovely on a summer evening). No, it’s the kitchen. The huge, fully-outfitted kitchen which is just so much bigger than anything he’s become accustomed to that he can’t wait to get in there and just start playing around.

“Dude, do you have any idea what I’ll be able to do there?”

Posted by Foobooz on October 3rd, 2012

Landscape designer Groundswell Design Group is the recipient of The 2012 Excellence on the Waterfront Honor Award for Commercial Design for their work on Morgan’s Pier. The Waterfront Center helps communities worldwide enhance their urban waterfronts and at their annual conference, they award prizes for excellence in waterfront design.

The attractive Morgan’s Pier, which opened in May on the Delaware River united urban materials, salvaged wood and vintage tables with leafy linden trees and other greens just below the Ben Franklin Bridge.

Groundswell’s work can also be seen in the garden at Talula’s Garden.

As for Morgan’s Pier, the outdoor bar and restaurant is closed for the season. They promise to reopen next April.
