Southwark’s Nick Macri won Hop Chef Tuesday night with “You Can Win Friends with Meat Salad.” A salad of housemade coppa with ginger pickled chiles, ballpark nuts, plus orange and coriander sauce. The dish will be on the menu at Southwark tonight and tomorrow. Wash it down with an Ommegang Hennepin.

Southwark’s Nick Macri wowed the judges last night with his “You Can Win Friends with Meat Salad,” an ode to Homer Simpson. Where most of the chefs chose one pairing principle (simple pairing, incorporation, mimicking, story telling and experimental), Macri included all five in his Ommegang Hennepin-based dish and that was enough for the win. But the coppa with ginger-pickled chiles, grains of paradise bread crumbs, ballpark nuts, and orange-coriander-cured sauce wasn’t the only dish that impressed. JG Domestic’s Yun Fuentes won the People’s Choice with his duck arepa and Ommegang Rare Vos glaze. And Fork’s Eli Kulp created a first-of-its-kind treat in his Crackerjack-topped beer rye pretzels.

For this month’s producers dinner at Southwark, chef Nick Macri is welcoming Tired Hands Brewing. The dinner takes place tomorrow, April 17th at 7 p.m. and for $45 you can try four courses of Macri’s food paired with beer from the Ardmore brew pub.
On Thursday night, Southwark will be tapping Ommegang Hennepin in the run up to Hop Chef. Macri will be rolling out a special sausage from 10 p.m. to midnight (Southwark serves food nightly to midnight), but Hop Chef competitors looking for the inside scoop, Macri assures us this won’t be his Hop Chef dish.

Yes, folks, it’s that time again. The second-annual Hop Chef competition (last year’s was won by local boy George Sabatino) is happening in Philly on Tuesday, April 23 at Union Transfer. Ommegang Hop Chef is less than a month away and the trash talking is heating up. This year’s cast will be hard pressed to match the trash-talking of last year’s contestants but Eli Kulp, Pat Szoke, Nick Macri and Lucio Palazzo are making a go of it.
Southwark’s Nick Macri has taken aim at Eli Kulp’s “food lab” and R&D ninjas is countering with a “flavour lab” of his own. Much of the antagonizing has focused on Macri’s Canadian heritage, hence the silly extra “U” in flavor. But this cookbook that showed up on the front steps of The Industry today might force Pat Szoke to up the ante.
The talk stops and the cooking begins on Thursday, April 23rd at Union Transfer. Six chefs will compete to be Hop Chef, tickets are $53.50, with a portion of proceeds going to support the Mural Arts Program and Groundswell.

On Tuesday, April 23rd at 7 p.m. at Union Transfer, some of Philadelphia’s most talented chefs will be competing to become Philadelphia’s second Ommegang Hop Chef.
The winner of Hop Chef Philadelphia will represent the city in a cook-off at Brewery Ommegang’s annual Belgium Comes to Cooperstown weekend.
Tickets cost $53.50 per person and includes all the Ommegang you can drink plus tastes of all six dishes that will showcase the competing chefs ability to pair beer with food.

This Wednesday, Southwark is continuing its producers dinner series with ReAnimator Coffee Roasters. All four courses will incorporate the local roaster’s coffee and the food of chef Nick Macri. ReAnimator owners Mark Corpus and Mark Capriotti will also be on hand to answer questions. The four-course dinner is $45 per person and for $10 you can add a beverage pairing.

Yes, it was an international rumble in Rittenhouse Square last night with a USA-vs-Canada, cross-border throwdown that pitted the pride of Detroit, Scott Schroeder (of South Philly Tap Room and American Sardine Bar), against Toronto’s own Nick Macri ,the charcuterie wizard of Southwark. It was a battle of the beards. It was a battle for national pride which, at a certain point, devolved into a drinking contest (as such things often do). It was an epic struggle between two chefs who may have forgotten some of their ingredients and left good sense at the door, but never forgot how much was riding on their victory or defeat.
It was Foobooz Open Stove Night IX and it was one for the record books. Thankfully, COOK’s faithful photographer Yoni Nimrod was there to capture it all on film. So for those of you who missed it, here’s a taste of how things looked from the inside.

Meal Ticket is reporting that Southwark’s own chef Nick Macri won the people’s choice award at the nationwide Best Bologna Contest at the Heritage BBQ Festival in Memphis. He shipped his own bologna down to the blind judging panel and the people named him the champ. To celebrate Macri and Scott Schroeder will be serving up the winning meat, fried up on a sandwich starting today at 4 p.m. at American Sardine Bar. So stop by to try the “People’s Champ.”
