Tom Grim, co-owner of Nomad Pizza wanted us to pass along that Nomad Pizza’s two locations will be closed for ten days starting on Sunday, January 20th. Perhaps he was also bragging that he and 14 other staffers will be flying from Philadelphia to Rome to do some reconnaissance.
Grim says they’ll be eating lots of pizza, drinking good Italian wine and beer as well as visiting purveyors including a buffalo mozzarella farm, touring a tomato packer and visiting their organic Parmesan supplier. As Grim said, “there has to be some benefit to working in a business where you work every weekend.”
Both Nomad locations will be reopening on Thursday, January 31st. And if you’re looking for Super Bowl plans, the game will be shown on the big screen on Sunday, February 3rd.

Though Adam Erace would have chosen something besides A Clockwork Orange to play at Nomad Pizza‘s movie night, he claims it “might just be worth the Malcolm McDowell-induced indigestion.”
With pies as winning as their mozzarella and spicy sopressata, bright with oregano and sticky with honey (a Hopewell waitress’s money recommendation), you’ll want to get in the duo’s good graces. I love the dynamic, chewy/crispy texture and yeasty, subtly sour flavor of their pizzas, a credit to the dough, which ages four to six days before seeing 800 to 850 degrees ?inside the copper-plated, Italian wood-burning oven.

The quibbles are minor and the praise major, in Craig LaBan’s review of Nomad Pizza.
[A]s far as I’m concerned, they are all chasing Nomad Pizza, whose most elemental pizzas, the Margherita and Marinara, are as close to perfection as I’ve tasted this side of Napoli. It begins with the dough, which is left to ferment for several days before cooking, and develops a complex malty sweetness. In the oven, it takes on an elegant constellation of char-spots, and an irresistibly savory, luxurious chew that dusts my lips with flour when my teeth sink deep into its crackly crust. It has a profoundly roasted flavor that lingers for hours after the meal is over.

“As cozy as a family gathering” is how Brian Freedman describes dinner at Nomad Pizza. We wished all family gatherings came with pizzas like this.
This means, for example, that the soppressata (from a small butcher in Union, N.J.) on its eponymous pizza is more than just a conduit for a vaguely porky flavor. It’s deeply flavorful, palm-sized, and round-kissed with just enough spice to justify the drizzle of local honey applied to it prior to its stint in the oven. The mingling of the salty-spicy juices of the soppressata and the deeper notes of the olive oil create a far more complex and complete riff on a pepperoni pizza than this city has seen in some time.
