About Last Night: COOK Masters Program Graduation Dinner

Yesterday was the final meeting for the first class of the COOK Masters Program, and what better way to put a cap on things than by having all the students get together and use what they’d learned to cook a mock service while being judged by local food writers, chefs and critics and bossed around behind the line by Michael Solomonov?

Yeah, nothing like an easy last day of classes, right?

Still, the 9 students that made it to the end of the program did a good job putting everything together. And while there were some stumbles, one thing was clear: There are now 9 very well-trained, well-rounded and well-connected new cooks on the Philly scene looking for kitchens in which to kick ass. And here’s a little bit of good news for those of you who didn’t make the cut for the first semester: COOK is doing it all again, starting very soon. So keep your eyes on Foobooz early next week for details on the new semester of the COOK Masters Program.

Bistrot La Minette Turns Four, Celebrates with $30 Menu

Happy 4th birthday to Bistrot La Minette! To celebrate La Minette’s anniversary, chef Peter Woolsey will be serving a special four-course menu tonight through September 6th. The dinner will be $30 with an optional wine pairing for $15 extra. Drink specials for $4 will also be available, and the regular Bistrot La Minette menu will not be available on these nights.

Make Your Reservations Now for the 4th Annual Pork Dinner at Meme

July 30th marks the 4th annual Pork Dinner at Meme with a few changes. Instead of delivering the multi-chef party to two seatings of 30 for the night, Meme is going to do only one seating of 30 to make the party a bit more intimate.

Chefs attending include: Nick Macri, David Katz, Michael Solomonov, Jennifer Carroll, Terence Feury, Peter Woolsey, Monica Glass, John Taus, and Michael Madrigale of Sommelier Bar Boulud & Boulud Sud in NYC.

Drew Lazor Covers James Beard Dinner at the Inquirer

Drew Lazor, former editor of CityPaper’s Meal Ticket blog, has moved on to bigger and better things. In a piece for the Philadelphia Inquirer, Lazor covered a pig dinner at the James Beard House in New York City featuring Philly’s top chefs.

The Philadelphia Pork Show featured Terence Feury of Fork, Michael Solomonov of Zahav, Peter Woolsey of Bistrot La Minetter, John Taus of The Corner, David Katz of Meme, and Jen Carroll. For $170 patrons got a peek at these chefs working together to create a pork feast much like those they do here at home. All six chefs cranked out a meal and managed to entertain the crowd and each other to boot.

Summer Menu at Bistrot La Minette

This summer Bistrot La Minette has changed their entire menu. As of this Friday, and for the rest of the season, the menu will be nothing but Provencal cooking. This means that even the La Minette’s most popular dishes – including chef Peter Woolsey’s wife’s mac n’ cheese – will be removed from the menu. (But if you ask nicely Woolsey and co. will be happy to oblige your favorite dish.)

Some highlights of the menu include Burgundy snails in bone marrow and anchovies, a white wine-braised rabbit leg, and pan-fried frogs’ legs as well as classic Provencal ratatouille and Provencal-style braised beef. For dessert look for the peach bread pudding or a house-made ice cream.

Menu For The 2012 Chef Invitational Duck Dinner at Bistrot La Minette

See that picture? That’s some of the best chefs in the city of Philadelphia acting the way chefs do when they either have a couple of bottles in them, or have all gotten together for some kind of diversion that only they truly understand and appreciate.

When it is the former, pictures don’t generally make their way out to the press. (Also, there’s usually at least one person not wearing any pants.) In the case of the latter, what comes of such gatherings is often funny stories, lots of good will and a killer dinner served to select members of the public smart enough to know a good thing coming when they see it.

In this case, what the above snap (of last year’s team) is celebrating is the 2012 version of the Bistrot La Minette collaborative duck dinner–a “Chef Invitational” being held on April 3rd at the aforementioned Bistrot, where 7 great chefs (plus one great sommelier) will gather to cook a dinner where every course focuses on duck.

But before you get to thinking that this is just another silly special event dinner (of the sort that seem to be popping up every other weekend these days), you’ve got to check out the menu. And of course, Foobooz can provide…

Reserve Your Table Now for Hunters Night at Brauhaus Schmitz

On Thursday, February 2nd Jeremy Nolen and Brauhaus Schmitz will be inviting in several big name chefs to collaborate on a wild game dinner. Jennifer Carroll (formerly of 10 Arts and Top Chef), Jeff Michaud (Osteria) and Peter Woolsey (Bistrot La Minette) will all be cooking up game meats like venison, wild boar, hare, wood pigeon and Rohan duck.

The five-course dinner will be $55 per person and an a la carte will also be available.

Dinner In Alsace

On January 25th and 26th Brauhaus Schmitz’s chef Jeremy Nolen and Bistrot La Minette’s Peter Woolsey will be collaborating in a Alsatian dinner at Bistrot La Minette. Alsace is the region in eastern France that borders Germany and its cuisine shares much with German food. The two chefs will collaborate on a four-course, $35 dinner at Bistrot La Minette.

Quick Bites: Garces Renovates, Han to Visit Georges

Garces Trading Company is closed for renovations until Thursday, August 25th. When complete there will be more high-top seating, some of which will be kept for walk-in customers. There will also be expanded pastry offerings, seasonal pies and special occasion cakes.

The idea of  Han Chiang of Han Dynasty cooking with Le Bec-Fin’s Georges Perrier makes our heads spin, in a good way. Sometime in November  Chiang will head to Walnut Street to collaborate on a Franco-Sichuan menu. Sounds pretty exciting. [The Feast]

In supermarket news, the Super Fresh at 2nd and Girard will open this Friday. Rejoice Northern Liberties and Fishtown, rejoice.
