Tonight at 7 p.m. on Destination America, formerly Discovery Home & Leisure, is featuring four local restaurants on United States of Bacon. As you might expect there’s a ton of bacon on the show but we have to raise an eyebrow over the inclusion of McNally’s Tavern’s Schmitter. Surely a great gluttonous sandwich, but as the diagram above shows, bacon is not a normal part of the Schmitter. Now bacon is available for a dollar add-on, but who needs bacon when you already have steak, grilled salami, cheese, fried onions, tomatos, special sauce and even more cheese?

PYT’s Tommy Up loves himself some Han Dynasty. So this week his Northern Liberties burger spot is offering a special burger created by Han Chiang himself. The burger is a blend of dan-dan sauce marinated pork belly and beef patty topped with spicy cucumbers and dan-dan aioli, served on a soft Chinese bun. Each burger is accompanied by a side of sichuan fries.
Get it now, because this special won’t last forever.

That whole Chick-fil-A/gay marriage controversy? It’s never going to go away. Over on the Philly Post, Victor Fiorillo reports on the era of the “Protest Sandwich”–which begins with the new Chick-Phil-Gay being done by (who else?) Tommy Up from PYT.
Unsurprisingly, Tommy has a few things to say about it:
It’s a boneless breast of chicken seasoned to perfection, hand-breaded, cooked in peanut oil and served on a toasted, buttered bun with dill pickle chips. Served with waffle fries, it’s oddly familiar, but with 100% less hatred. For every Chick-Phil-Gay we sell, we’ll donate $1 to the Mazzoni Center, an organization that provides counseling and health services for LGBTQ Philadelphians. Oh, and while you’re here, try one of our famous hand-spun adultshakes. They’re the gayest shakes in town.

So we were having this debate recently on burgers and high-end burgers and bar burgers and what, really, could be done to the burger that hasn’t already been done. Because it was a slow day around the office, talk turned to semantics–to specific definitions of what a burger could (and could not) be–and during the course of this, we wondered whether a burger had to be made of beef in order to consider it a burger. And if not, what meat could be used and what could be done to it before it left the realm of burger-dom and became something…else.
Needless to say, we didn’t settle anything on that day. The question is still very much up for debate. But in the meantime, the good folks over at PYT are pushing the boundaries of definition with the summer addition of shrimp, lobster and crab burgers to their ever-changing specials menu. The snap above leads me to think that a burger certainly can be made of sea critters–of chopped jumbo shrimp and lobster/crab cakes. Mostly because it just looks so delicious.
