Remember back a couple weeks ago when we wrote about Kevin Sbraga’s No Kid Hungry/Share Our Strength charity dinner? Of the five chefs that Sbraga was bringing on to cook with him (Walter Abrams, Shola Olunloyo, Jonathan Adams, David Katz and Nick Elmi), four of them were currently without kitchens, and the joke around Foobooz World HQ was, what does Kevin Sbraga know about Nick Elmi–the sole working chef on the list–that we don’t?
Well apparently he really did know something because word came down this weekend that Elmi was leaving his position as chef at Rittenhouse Tavern to open a restaurant of his own. Which means that Sbraga’s dinner can now function as a kind of support group for Philadelphia chefs without kitchens (including three former Perrier vets: Adams, Elmi and Abrams) as well as raising money for a good cause.

Oops, a foie gras froth winds up on the plate of Christina Perachio’s pescatarian guest at Rittenhouse Tavern.
The next dish is a doozy: five large day-boat sea scallops, perfectly seared on top with a golden-brown crisp sitting in a heavy-handed amaranth truffle butter sauce with fresh and tender chanterelles and turnips that stand on their own. They are gorgeous, rich and delicious. And their inclusion in our meal comes as a result of my companion’s request for an entrée fit for a pescatarian. Which is why, the next day, when I call to double-check the ingredients, I’m startled to learn that they the scallops were topped with a vanilla foie gras froth.

Trey Popp checks in on Le Bec Fin alum Nick Elmi to see what he’s doing at Rittenhouse Tavern, the latest restaurant to live in the Art Alliance building on Rittenhouse Square.
[S]ummer found Elmi breathing real personality into his creations. Plancha-seared octopus arms sprawled across a black smear of blood sausage, fermented garlic and squid ink—a brilliantly funky foil for the half-moons of apricot glistening above it. In a cool, minty potage of pureed romaine, spinach, cucumber, peas and dill, he had hidden a globe of horseradish ice cream between citrus-poached shrimps. It didn’t burn so much as sparkle.
Two-and-a-half stars (Good to Excellent)

For our biggest issue of the year, we decided early on that we also wanted to run a review big enough to match it. And what is a bigger deal in Philly right now than the re-opening of Le Bec Fin under the command of Nicolas Fanucci?
It was a wild (and expensive) proposition, but totally worth it as Trey Popp got to see Le Bec 2.0 from its earliest moments–watching it shake off the cobwebs of 40-plus years of history, find its footing in the brave new world of fine dining and fight for its place in Philadelphia’s restaurant scene. Here’s just a taste of how things shook out.

Rittenhouse Tavern is normally closed on Mondays, but on July 23 the restaurant will be hosting a one-day-only culinary workshop and one-seating-only dinner hosted by chef Nick Elmi and featuring Alex Talbot and Aki Kamozawa of Ideas In Food.
The workshop (which runs for 6 hours, from 10am-4pm, and costs $250 per person) is meant primarily for chefs, culinary students and hardcore home-cooking food nerds, but will allow participants the use of the entire Rittenhouse Tavern space (including the kitchen) and give them access to Alex and Aki as they learn about the science of food and refine their own culinary ideas.
Following the workshop, there will be a separate dinner (with a 6pm seating and a $105 price tag, not counting tax or tip) where Elmi and the Ideas in Food crew will do a 7+ course dinner highlighting the ideas and techniques explored during the workshop.
Reservations aren’t required for either the workshop or the dinner, but they’re highly recommended. You can snag a space by calling the restaurant at 215-732-2412.

Deviled eggs aren’t just for holidays at your aunt’s house anymore: they’re a full-fledged appetizer just waiting for the right creative hands to make them the masterpieces they really are. In addition to the other many happy hours popping up, this Friday, June 15th at 4pm, Rittenhouse Tavern will be launching their first Firkin Friday Happy Hour. Each week will feature a new firkin and this week features Dogfish Head’s “Johnny Cask” the 75-Minute IPA. Weather permitting the cask will be tapped in the outdoor garden. Glasses of the firkin will run for $5.
Chef Nick Elmi will be creating a special charcuterie plate for $6 to compliment the beer, and the regular happy hour menu will also be available. Guests who eat or drink at Rittenhouse Tavern receive free admission to the Philadelphia Art Alliance, where local artist Adam Wallacavage is currently showing his exhibit “Shiny Monsters.”
