Rotisseur Has a New Chef and Mighty Fine Chicken Noodle Soup

Posted by Foobooz on November 14th, 2012

Rotisseur, Aaron Matzkin’s 18-month old rotisserie chicken spot on 21st Street has a new face in the kitchen, Garces alum John Kasenchak. Kasenchak joins the the Best of Philly winning Rotisseur from Tinto/Village Whiskey where he was a sous chef. Kasenchak has already made his presence known with Benton’s bacon roasted Brussels sprouts which smelled ridiculously good when teasingly waved under our nose yesterday.

And then there was the chicken noodle soup »

The Bird is the Word at Rotisseur

Posted by Foobooz on August 11th, 2011

Adam Erace goes through all the sides (well almost all of them) at Rotisseur but it is the bird that is at center stage.

At Rotisseur, the bird’s the word. Matzkin taste-tested specimens from 15 providers before settling on the one that would grace his French-engineered Rotisol rotisserie (“the preferred choice of Parisian bistros”). The best bird hailed from Senat Poultry, a halal operation so clear-conscious they’ve put pictures of their Paterson, N.J., slaughterhouse on their website and invite y’all to come down for a visit now, ya hear! A co-op of Amish farmers raises Senat’s chickens without hormones and antibiotics in Lancaster, where the free-roaming roasters develop the all-important “fatty skin” that turns to sheets of crackly gold leaf in the blazing rotisserie oven.

First Bite: Rotisserie Chicken at Rotisseur

Posted by Foobooz on May 24th, 2011

Last night we checked out the softly opened Rotisseur on 21st Street just south of Chestnut. The minimal 16-seat space serves rotisserie chicken and sides that change daily. the menu ranges from a leg and a thigh for $4 to $14 for a whole chicken. The chickens are all local, cage-free, hormone free, antibiotic-free and halal but all that wouldn’t really matter if it didn’t taste good. Rest assured, these birds are juicy and tasty. We had a breast and wing with sides of potato salad and corn muffins (for under 10 bucks). The chicken was juicy and tender while the crust had a good snap and stayed on the chicken throughout. We cleaned the bones and that’s saying something coming from this top-of-the-food-chain prissy eater. The sweet corn muffins and potato salad were also winners.

Rotisseur will add other proteins and delivery down the line. Right now the restaurant is only open for dinner from Monday through Friday with lunch hours coming soon. We can hardly wait to add Rotisseur to our lunch rotation.
