Craig LaBan bestows an enthusiastic two bells on David Ansill’s version of Bar Ferdinand.
The fennel-crusted tuna, essentially Spanish-inspired sashimi draped over haricot verts, caper berries, kalamata olive vinaigrette, boquerone anchovies, saffron-tomato conserva, and shaved bottarga (“a little smoked tuna dust!” says Ansill), pushed piquance to the edge of boldness without sliding over. His citrusy, sous-vide-cooked octopus was meltingly tender. A simple crab “croqueta,” almost fluffy with sweet meat beside a crunchy nest of shaved fennel and citrus, showed classic elegance.
A crock of crispy noodle fideos tossed with sherry cream and wild mushrooms brought focused, earthy vegetarian flavors. But Ansill’s talent for alt-meats is also on joyful display. Aside from the shoestring shreds of fried pig ears with purple mustard, there were juicy squares of pork belly with a bacon-sherry reduction, and pork cheeks, brined overnight, then sublimely braised in tomato brava sauce sparked with ginger.

Every Sunday from now until January 13th, Jamonera is offering a 10-course tapas tasting menu. With plates that vary from a simple mix of spanish olives and lupine beans, to oloroso braised shortribs with catalan greens, pickled raisins, and pinenuts, this menu promises range and creativity. Throw in a flight of sherry for $20, and you won’t even miss your favorite shows.

For one night only, Jamonera’s legendary 10-course tapas tasting menu is returning. Beginning this past summer, the Spanish wine bar served a prix fixe selection of chef-curated tapas for just $35 per person. This Sunday, November 11, those who missed the previous food fest have the chance to experience another tapas tasting, this time at $40 per person.

This Sunday August 26th Jamonera will be serving a tapas tasting menu. For just $40 a person guests receive ten different tapas dishes, from grilled Spanish octopus to watermelon and roasted beets. A tasting menu is a great way to try out an array of dishes so be sure to check it out.

Amada in Old City is now offering tapas and drink specials Wednesday through Friday evenings between 5 p.m. and 7 p.m. Among the happy hour deals, $2.50 to $4.50 tapas, $5 sangria, $6 wine and $8 cocktails.

Sunday night I dined at Bar Ferdinand for the first time in several years and was happy to see so many familiar options on the menu. But even though the croquettes were still on the menu they had changed under the tutelage of David Ansill, who has been cooking at the Owen Kamihira’s Northern Liberties tapas spot for a little more than a month. So had the empanadas, the calamari (now served in a sauce as black as could be) and several other staples of the Bar Ferdinand menu. Each dish was excellent and refreshed a menu I feared might be feeling dated. Further proof of Ansill’s handywork could be spotted in the night’s specials, a lamb belly dish and a tomato salad. That salad will be part of Ansill’s new Thursday tasting menu. The cost is $40 per person and is offered from 5 to 11 p.m. Look for Ansill to overhaul the entirety of Bar Ferdinand’s menu by late September.

Sunday, July 29th Jamonera is hosting a 10-course, $35 tapas dinner. The dinner from the deans of 13th Street will include gaspacho, croquettes, scallops, meatballs and six other courses.

Craig LaBan heaps the praise on the latest from Marcie Turney and Valerie Safran’s tapas bar, Jamonera.
Turney’s most stunning dishes, though, are dressed in squid-ink black. The calamari marinate in ink before getting crisped and are so ebony they look to have been fried in a volcano. But they’re delicate and tender, with a smoky wisp of pimenton Spanish paprika, a squirt of lemon, and garlic chips. With the mussels escabeche, whose vermouth-marinated mollusks are cleverly in a sardine can, squid ink completes the ingenious trompe l’oeil garnish of faux mussel shells molded and baked around actual shells with a potato-garlic tuile dough.

Brunch returns to Bar Ferdinand on Sunday March 25th from 11 a.m. to 3 p.m. The Northern Liberties Spanish tapas spot will feature a new menu of Spanish inspired brunch dishes and bottomless Bloody Marys and Mimosas.
Highlights include Torrija Rellena de Manzana (a Spanish French Toast, made from cider soaked brioche stuffed with sautéed apples and golden raisins, topped with whipped cream and drizzled with a brown sugar apple syrup), Huevos con Morcilla ‘Hash’ (poached eggs over Morcilla blood sausage hash and topped with a Piquillo Aioli), Egg Sandwich Española (brioche sliders with the classic Spanish Potato Omelette, house-smoked bacon, slow roasted tomatoes and aioli).
