Toshiyuki Kiuchi is back in town, and he’s got a bunch of beer with him. Kiuchi is the owner of Kiuchi Brewery in Japan, a magical facility that produces their line of Hitachino Beers—some the finest craft beers in the whole country. So why is Kiuchi in town?

Zama Expanding to 3200 Chestnut Street

Michael Klein is reporting that Hiroyuki “Zama” Tanaka will be opening a two-story Japanese restaurant focusing on yakitori, noodles and dumplings at Chestnut Square. Chestnut Square is intending to open this fall at 3200 Chestnut Street. The mixed-use complex on Drexel’s campus will also be the home of the city’s second Shake Shack.

About Last Night: Open Stove 10 At COOK

Yeah, we did it again. Last night was the 10th installment of our Foobooz Open Stove series at COOK, and we celebrated with booze and food and dirty jokes and two great teams from two of the best restaurants in Philly.

On one side, we had Team SPTR, headed up by Mark Regan from the South Philly Tap Room. On the other, Team Zama, bossed by Kevin Yanaga of Zama. Both sides fought hard. Both sides put up some amazing dishes under odd (and seasonally-appropriate!) conditions. And in a rare moment for Open Stove, neither team panicked despite the fact that, this time around, they had every reason to.

What’s that you say? You couldn’t make it last night? Well that’s okay. You’ll get ‘em next time, tiger. But in the meantime, you’re lucky because we had COOK shooter Yoni Nimrod there taking snaps of all the action for us, so now you’ll know exactly what you missed.

Zama Launches His Next Charity Collaboration: Garces Chirashi

Ever wondered what it would be like to mix your favorite sushi dish with the classic Spanish paella? Chef Hiroyuki “Zama” Tanaka wants you to wonder no longer with his Garces Chirashi. The latest in a series of collaborations for charity, the Garces Chirashi is a kind of Japanese paella in collaboration with–you guessed it–chef Jose Garces. One dollar from every dish sold will be donated to the Garces Family Foundation, a charity benefiting immigrant families in Philadelphia.

Garces Chirashi is served in a bowl, over sushi rice and includes:

  • Head-on Madagascar shrimp
  • Diver scallops
  • Spanish baby octopus
  • Hamachi sashimi
  • Madai sashimi
  • Kurobuta pork sausage
  • Edamame, avocado and mixed Japanese herbs (kaiware sprouts, mitsuba leaf, myoga)
  • Espelette pepper aioli
  • Saffron sushi rice

Soft Shell Shrimp at Zama

Soft Shell Shrimp? Yep. You read right. For a limited time, Zama will be serving up a soft shell shrimp special. For $9, you’ll get five shrimp crisped and fried and served alongside a fried shishito pepper, all sprinkled with a dusting of yuzu salt. Yum. Well yum if you can get past the shell thing.

The Revisit: Eating Vetri at Zama

In The Revisit, Philadelphia Magazine restaurant critic Trey Popp turns his attentions to classic, underappreciated or overlooked restaurants in Philly and beyond. This month, he drops in for a meal at Zama in Rittenhouse Square.

“It happened first in Philadelphia” isn’t the common claim it once was, back when the Constitution’s ink was still sticky and George Washington ruled the realm from the 500 block of Market Street.  But you can say, without too much of a stretch, that it was one of the first American cities to turn its chefs into celebrities.  After all, when you don’t have any real celebrities, you have to work with what you’ve got.

Whether that’s the strict truth or just a poetic one, Philly today retains a brand of hometown chef fixation that you don’t see anywhere else.  For proof, take the menu at Zama.  Over and above the dragon rolls and miso bouillabaisse and tofu cooked tableside, pride of place goes to maki-style homages to Marc Vetri, Michael Solomonov, and Pierre Calmels.

The Vetri, Zahav, and Bibou rolls name-check the best Italian, Middle Eastern, and French restaurants in Philadelphia.  They also signal the sort of company Hiroyuki “Zama” Tanaka wishes to be considered alongside.  My wife and I went on a recent weekend evening to see whether he’s gotten there.

Cook Sharpens Its Knives

For you pros (and seriously dedicated kitchen amateurs), Cook has a skills class scheduled for this weekend that is A) not yet full and B) perfect for those with an Angelina Jolie-level fascination for knives. Dig it:

Sun 10/23, 2pm Japanese Knife Sharpening with Kevin Yanaga of Zama

This class – which is a favorite among professional chefs – will introduce students to Japanese knives and Japanese-style western knives. Chef Yanaga, sushi chef and sous chef at ZAMA who hails from Kawasaki, Japan, will lead this hands-on class on how to sharpen Japanese knives using traditional sharpening stones. The demonstration will also include how to fix chips on knives and other useful tips.

?uestlove Gets His Own Roll at Zama

?uestlove joins the likes of Marc Vetri, Ryan Madson, and Pierre Calmels of Bibou with his induction into the Celebrity Roll hall of fame at Zama (which won a Best of Philly award this year for–you guessed it–it’s celebrity-themed hand-rolls).

The Roots’ star apparently inspires the essence of cheesesteaks since his roll (named “The Drum Roll”)  is basically a fancy, tubular cheesesteak made with Washugyu beef (think of it as super-Wagyu), provolone, bibb lettuce and aioli, wrapped in red pepper flake soy paper. Classy, right? And yes, you actually can order it “wit’ or wit’out” sauteed onions.

With the roll appearing on next week’s menu, those ordering it can also feel good about the $1 donation for each roll sold going to Harlem Village Academies, which is ?uestlove’s charity of choice. And while you’re waiting, check out the video of his ?uest-ness in the kitchen with chef Zama lending a hand in the creation of the Drum Roll.
